Customers, for example, prefer carrots that are brilliant orange. Plant breeders discovered that enhancing the hue resulted in an increase in vitamin A levels.
When customers requested a brighter red on the inside of a water melon, it was followed by an increase in lycopene, a phytonutrient that aids in macular degeneration and may have cancer-fighting capabilities. When marketers desired sweeter pineapples, they upped the sugar content, which also upped the vitamin C content.
These remarkable achievements are merely a byproduct of efforts to make specific crops more marketable. It will happen if we, as customers, demand more nutrition in our foods and make purchase decisions that favour more nutritional items. Now it’s time to consume your vegetables.
